There’s not much you can say about Biga on The Banks that hasn’t been said already. The River Walk staple has been getting rave reviews for over 20 years, and it’s no surprise that owner and Executive Chef Bruce Auden has received multiple James Beard Award nominations for his effort. But we’re here to let you in on a little secret… the bar’s top notch also.

The bar is run by Brandy Alexander Tour veteran Ana Patrizia Cabrera, who has created more than a few innovative takes on the classic cocktail over the years. This year is no exception. Her Downtown Alexander is a (mostly) dairy-free delight that substitutes a house-made spiced oat milk for the more traditional cream. The oat milk is sweetened with piloncillo and sweetened condensed milk and infused with cinnamon, cloves and Madagascar vanilla. Throw in a little espresso liqueur and sea salt chocolate shavings and you have yourself the Lay’s potato chips of cocktails… bet you can’t drink just one.

But there’s more to Ana than just crushing cocktails. Born in Madrid, Spain, Ana is an army brat who spent time in Florida before making it to San Antonio. And for those wondering, she went to Churchill High School. She likes to wind down with a London dry martini (no vermouth) with a lemon zest. For a garnish, the lemon peel must be trimmed and shaped like a swan to be acceptable. Otherwise, what are we even doing here, right?

In her spare time she’s also aiming to be anointed a saint, apparently. When asked what she’d do if she won the lottery, her answer put us all to shame… she would start a non-profit foster home called Nora’s Place (after her grandma) that doubles as an interactive art center for the blind.

1 oz. Kinsman Rakia
1/4 oz. Borghetti Caffe
3/4 oz. Tempus Fugit Crème de Cacao
2 oz. Sweetened Spiced Oat Milk (house made with sweetened condensed milk, oat milk, piloncillo, cinnamon and Madagascar vanilla.)

Instructions. Combine all ingredients in a tin over ice. Shake vigorously. Double strain into a coupe.

Garnish. Sea salt chocolate shavings.
