Domingo Restaurant.
Domingo Restaurant, the eatery nestled in the Canopy by Hilton San Antonio Riverwalk hotel, offers a modern tribute to the flavors of South Texas.
It also offers a gorgeous space along the riverwalk to sip on a Brandy Alexander and people watch.
Elias Ybarra is the barkeep we can thank for the Dona Maria Alexander. Elias gave us a little history lesson with the naming of the cocktail. Domingo Terán de los Ríos was the first governor of the Spanish province of Texas and is said to have be the one to name San Antonio. His mother’s name was Maria, or so Elias says. I was going to fact check, but decided I would take his word for it. The more you know…
The A&M alum (we won’t hold that against him) grew up on a cotton farm outside of San Angelo and got into bartending in college. We’re sure glad he did too ‘cause his take on the Brandy Alexander is impressive.
The Dona Maria Alexander features a unique liqueur never before seen on the Tour. Nixta Licor de Elote is a Mexican corn liqueur that lends a mild, sweet corn flavor to the cocktail. Sounds strange, but it actually pairs well with the vanilla and citrus notes found in Licor 43. Another unconventional ingredient used is aquafaba, an egg white substitute made from the liquid left over from cooked chickpeas.
Definitely one of the more unique cocktails on the Tour, the Dona Maria Alexander is a must-try that’s only available through NYE, so grab a spot on the restaurant’s stunning terrace and enjoy this one of a kind cocktail while you can.
