The Fairmount Hotel returns to the Tour this year as does barkeep Rachel Rainwater who previously participated in the Kinsman Brandy Alexander Tour while at Brooklynite a few years back.
Rachel’s an industry veteran who got her start at Liberty Bar. And guess who gave her that start? Our very own Katie McKee hired Rachel as a bartender ten years ago or so, and look at her now…still dealing with Katie all these years later! I’m not saying that Katie’s the reason Rachel plans to retire where “nobody is,” but you know…
So what does this Norman, Oklahoma native have in store for us this time around? Introducing the Amarena Alexander, a mostly stick to the script take on the classic dessert cocktail with Kinsman, half and half and crème de cacao forming the backbone of this version. Now things get more interesting.
A splash of Heering Cherry Liqueur, the world’s first cherry liqueur, is added to lend subtle notes of sweet cherries and almonds. Finally, absinthe is sprayed into an empty coupe to impart just a whisper of anise flavor.
The result? Mouthwatering. Think chocolate covered cherries. Who doesn’t like chocolate covered cherries this time of year…or anytime, really? But it’s even better than that because it’s chocolate covered cherries in a cup!

1.5 oz. Kinsman Rakia
1 oz. Half and Half
3/4 oz. Giffard Crème de Cacao (white)
1/4 oz. Heering Cherry Liqueur
Instructions. Combine all ingredients in a tin over ice. Shake vigorously. Double strain into a coupe misted with absinthe.
Garnish. 2 dashes Aztec chocolate bitters.
