Nate Doctor, Dean’s Steak and Seafood

Dean’s Steak and Seafood is a remarkable dining and imbibing experience you won’t want to miss. Adapted into a historic 19th-century schoolhouse, this classic steakhouse and bar offers an elevated culinary journey featuring an impressive menu of prime steaks, including A5 Japanese and Texas wagyu, as well as top-quality seafood.

Dean’s is housed within the newly opened Kimpton Santo Hotel, a stunning establishment that artfully combines elements of new construction with adaptive reuse, paying homage to the rich architectural heritage of San Antonio. It’s the perfect backdrop for a drink that’s just as much about tradition as it is about reinvention.

Introducing the Santo Alexander, a cocktail that’s as bold as the hotel it’s served in, brought to you by Nate Doctor. Traditional Brandy Alexanders are rich, creamy, and a little indulgent, but Nate wanted to shake things up with a fruit-forward twist. His creation combines the smooth, luxurious flavors of Vanille de Madagascar, a touch of brown sugar cinnamon simple syrup, and a hit of Tempus Fugit Crème de Banane Liqueur—making it an unexpected, yet utterly delicious, variation on the classic. The combination of flavors is both rich and refreshing, making it a standout choice for Brandy Alexander enthusiasts.

So who’s the creative genius behind the Santo Alexander? That’ll be Nate Doctor. Nate grew up in Oakland before making his way to San Antonio, where he graduated from UTSA. Nate began his career in the hospitality industry as a server and quickly transitioned to bartending, where he found his true passion. Nate is a self-described nerd who enjoys playing video games during his free time. Interestingly, his initials spell out "NRD," which he embraces as a badge of honor for his nerdy interests. He also loves his three-legged cat, Little Peggy, and very much enjoys spending time with this fiancé, Rubi.

Since there are three Tour stops at Kimpton, grab your designated drivers (or hail a ride – we're responsible drinkers here) and head over now through NYE and savor each version of the classic dessert cocktail.
